This vibrant Wild Specialty Beer leads with an explosive sensory profile driven by a massive 20% addition of fresh Raspberry and Blackberry. The aroma is dominated by jammy, bramble-fruit aromatics interwoven with a sharp, clean lactic tang from a custom Lactobacillus blend. On the palate, the fruit provides a bright, zingy acidity that mimics the snap of fresh berries, while the choice malts offer just enough structural support to prevent the beer from feeling thin. It finishes exceptionally crisp and tart, with a lingering fruit skin tannin that invites another sip, embodying a refreshing, fruit-forward modern sour.
Appearance. Deep ruby to magenta hue (20-25 SRM) with a soft, pink-tinted head that dissipates quickly. The beer is slightly hazy due to the heavy fruit addition, with minimal lacing.
Aroma. High intensity aromatics of fresh-picked Raspberry and earthy Blackberry. A clean, sharp lactic sourness is prominent, reminiscent of Greek yogurt. Malt character is low, presenting as a faint cracker-like note, while hop aroma is absent.
Taste. The initial impression is a bracing, tart fruit punch. Bright Raspberry tartness leads, followed by the darker, slightly more tannic Blackberry depth. Bitterness is very low, as the balance is driven by acidity rather than hops. Malt flavor is minimal, providing a neutral bread-crust backbone. The finish is dry and acidic, with a lingering berry-skin aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived tartness. There is no alcohol warmth. A slight, pleasant fruit-derived astringency adds structure, while the finish is clean and refreshing.
