This Cold IPA, a collaboration between Drop Project and North Brewing Co, presents a modern, lean interpretation of the American IPA. It showcases a crisp profile driven by a base of pilsner malt, resulting in a brilliant, pale gold appearance. The sensory experience is dominated by an intense hop bouquet of resinous pine, bright grapefruit, and crushed tropical fruit. Fermented cool for a neutral, lager-like cleanliness, it allows the assertive bitterness to shine through a bone-dry finish. The result is a snappy, refreshing mouthfeel that emphasizes hop clarity and drinkability while maintaining the classic punch of a west-coast-inspired lupulin profile.
Appearance. Luminous pale straw to light gold (4 SRM). Exceptional clarity with a brilliant shimmer. Topped by a dense, bright white, frothy head that exhibits excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity aromatics lead with pungent notes of citrus zest, fresh pine needles, and a medley of tropical fruits like passionfruit and pineapple. The malt character is very low, providing a clean, cracker-like or grainy backdrop. Fermentation is exceptionally clean with no perceptible esters, ensuring a pure hop-forward presentation.
Taste. The initial impression is a crisp, sharp hit of hop flavor featuring grapefruit peel and resinous wood. Bitterness is firm and assertive but clean, supported by a minimal, grainy malt sweetness that quickly fades. The fermentation profile remains neutral, leading to a bone-dry, snappy finish with a lingering, pleasant bitterness and citrus oil aftertaste.
Mouthfeel. Medium-light body with a very crisp, lean texture. Carbonation is medium-high, providing a lively, scrubbing effervescence. Alcohol warmth is light and well-integrated, contributing to a high level of refreshment without any astringency or harshness.
