Drop Project Layers is a vibrant Wild Specialty Beer that prioritizes high-intensity tropical aromatics within a sessionable 3.5% frame. The sensory profile is defined by a dense triad of Mango, Pineapple, and Passion Fruit, which provide a lush, sun-drenched character against a sharp lactic backdrop. The acidity is bright and puckering, characteristic of its kettle-soured origins, while remaining exceptionally light and refreshing. Expect a clean fermentation profile that allows the pulpy sweetness of the Mango and the zesty, acidic bite of the Passion Fruit to lead the palate, finishing crisp with a lingering Pineapple tang that invites another sip.
Appearance. Deep straw to pale orange (SRM 3-6); hazy to opaque with visible fruit suspension. Low to moderate white head with fair to poor retention and minimal lacing.
Aroma. High intensity; dominant notes of fresh Mango and tangy Passion Fruit. Moderate lactic tartness. Subtle Pineapple sweetness in the background. Negligible malt or hop character.
Taste. Immediate sharp lactic acidity. Vibrant flavors of Pineapple and Mango provide a fruity core, while Passion Fruit adds a citrusy, acidic edge. Bitterness is very low. Finishes very dry and tart with a lingering tropical fruit essence.
Mouthfeel. Light body; high carbonation. Very refreshing with a slight puckering astringency from the fruit acids. Zero alcohol warmth.
