Drop Project

This assertive American IPA exemplifies the West Coast style with a bold, hop-forward profile. The sensory experience is dominated by the interplay between Simcoe and El Dorado hops. Simcoe drives a classic resinous pine character accompanied by sharp grapefruit zest, while El Dorado introduces a lush, tropical layer of ripe mango and sweet candied orange. Beneath these vibrant hop notes lies a clean, understated grainy malt backbone that provides just enough support. The finish is notably dry and crisp, leaving a lingering, punchy bitterness that invites another sip, perfectly capturing a modern, refreshing take on a traditional hop-heavy style.

Appearance. Displays a brilliant, medium gold color with high clarity. It is topped by a persistent, medium-sized white head that leaves delicate lacing on the glass as it recedes.

Aroma. High intensity hop aroma featuring prominent resinous pine and citrusy grapefruit from the Simcoe hops. These are complemented by tropical mango and stone fruit notes from El Dorado. Malt presence is low, characterized by a clean, neutral graininess.

Taste. The initial impression is a wash of citrus and tropical fruit, followed quickly by resinous pine. Simcoe provides pithy grapefruit flavors, while El Dorado contributes candied orange and mango. Bitterness is firm and clean, balanced by a light, bready malt background. The finish is dry with a lingering hoppy aftertaste.

Mouthfeel. Medium-bodied with a smooth, clean texture. Carbonation is medium-high, providing a crisp sensation on the palate. A very subtle, well-integrated alcohol warmth is present, with no astringency or harshness.
