Drop Project

Dawn is a vibrant Double IPA that showcases an intensive double dry-hop regimen featuring Azacca, Citra, Citra Cryo, and Strata. It opens with an explosive aromatic profile of tropical stone fruits and a refined touch of resinous pine. The use of a New England house yeast contributes to a rich, silky, and creamy mouthfeel that carries the high alcohol content with grace. While it delivers an upfront sweetness reminiscent of ripe mango and peach, the experience culminates in a crisp, clean citrusy finish. This modern interpretation balances lush hop-saturated flavors from the Citra and Strata with a smooth, drinkable structure.

Appearance. Deep gold to light orange (8-12 SRM). Pours with a moderate-sized, persistent, off-white head. Displays a notable haze consistent with heavy dry-hopping and yeast selection.

Aroma. Intense hop aroma dominated by tropical fruit, mango, and stone fruit from Azacca and Citra, complemented by a light resinous and berry-like note from Strata. Low, neutral grainy malt support with light fruity esters from the house yeast.

Taste. Powerful hop-forward profile mirroring the aroma's tropical fruit character. High bitterness that is smooth and clean rather than harsh. Low, soft malt character supports the hops. Finishes medium-dry with a lingering citrusy and resinous aftertaste and no solventy alcohol.

Mouthfeel. Medium-full body with a notable creaminess and silky texture. Moderate carbonation. Smooth, well-integrated alcohol warmth without astringency or harshness.
