Drop Project’s All of Us is a vibrant, modern take on the American Pale Ale, showcasing an expressive hop profile. Heavily dry-hopped with Strata, Ekuanot, and Simcoe (including Simcoe Cryo), it delivers a punchy bouquet of tropical pineapple, juicy cantaloupe melon, and a nostalgic tutti frutti sweetness. Despite its sessionable ABV, the beer features the brewery's signature thick, oily body, providing a luscious canvas for the resinous pine and stone fruit notes. The malt remains a clean, supportive background of light bread and grain, allowing the complex, fruit-forward hop character to shine through a smooth, approachable finish.
Appearance. Pale golden to light amber (5–7 SRM). Displays a moderately large, creamy white head with excellent retention and intricate lacing. Clarity is generally clear, with a very slight haze common from the heavy dry-hop load.
Aroma. Moderately high hop intensity featuring dominant notes of tropical pineapple, melon, and mixed berry. Simcoe provides a foundation of resinous pine and grapefruit, while Strata adds strawberry and dank undertones. Low neutral-grainy maltiness supports the hops. Fermentation is clean with very low fruity esters.
Taste. Initial impression is a burst of tropical fruit and melon. The hop flavor follows the aroma with pineapple and cantaloupe at the forefront, backed by Simcoe-derived citrus and resin. Bitterness is moderate (approx. 35–40 IBU), providing balance without being aggressive. Malt character is low, suggesting light bread and neutral crackers. The finish is medium-dry and clean, with a lingering fruit-cup aftertaste.
Mouthfeel. Medium-full body with a notably thick and oily texture, providing a creamy mouth-coating quality unusual for the ABV. Carbonation is moderate. No perceptible alcohol warmth. Finishes smooth with no astringency or harsh hop bite.
