The aroma is a complex tapestry of traditional straw and hay, accented by the floral and herbal nuances of French Strisselspalt and the distinct white grape character of Hallertau Blanc hops. On the palate, a vibrant effervescence carries notes of sweet bubblegum and a sharp black pepper spice derived from the Belgian yeast. Appearance. Pale gold (approx. 5-6 SRM) with a slight, rustic haze typical of unfiltered farmhouse ales. It features a voluminous, dense, rocky white head with exceptional retention and intricate Belgian lacing.
Aroma. High intensity aromatic profile. Prominent fruity esters of white grape and subtle bubblegum are layered over a spicy, phenolic base of black pepper. Hop character is moderate, displaying floral, grassy, and herbal notes from Strisselspalt and Hallertau Blanc. The malt presents a clean, lightly grainy, cracker-like Pilsner malt foundation.
Taste. Initial impression is bright and crisp with a soft, grainy Pilsner malt flavor. Medium-high hop bitterness is immediate, complemented by flavors of grass and white grape. The fermentation character is assertive, featuring spicy black pepper and a hint of fruitiness. It is highly attenuated with no residual sweetness, leading to a very dry, clean, and slightly spicy finish.
Mouthfeel. Medium-light body with very high carbonation, creating a prickly, effervescent sensation on the tongue. A light, well-integrated alcohol warmth is present at 7% ABV. It is crisp and refreshing with no astringency.
