Dovetail Brewery’s Czech Premium Pale Lager is a masterclass in traditional lagering, defined by its remarkably soft water profile that mirrors the heritage of Plzeň. Brewed with 100% Pilsner malt, the beer offers a deeply bready and rich grain foundation. This serves as the perfect stage for a vibrant showcase of Czech hops, specifically Saaz, which provides a classic bouquet of spicy herbs and delicate floral notes. The experience is defined by a pronounced yet exceptionally smooth bitterness, resulting in a rounded, highly drinkable character. It concludes with a clean, lingering finish where the interplay of bready malt and noble hops remains in perfect harmony.
Appearance. Deep gold color (approximately 5 SRM) with brilliant clarity and a dense, long-lasting, creamy white head that provides excellent lacing.
Aroma. Medium-high intensity featuring rich, bready-rich malt and a prominent spicy, herbal hop bouquet. The fermentation is clean, though very low fruity esters and a subtle hint of diacetyl are acceptable and add to the Old World complexity.
Taste. Rich and complex bready maltiness leads the palate, followed quickly by a pronounced but soft and rounded bitterness. Hop flavors are medium-high, displaying spicy and floral notes. The finish is long and well-balanced, retaining malt depth without becoming cloying or overly harsh.
Mouthfeel. Medium body with a distinctively soft and rounded mouthfeel attributed to the low-mineral water profile. Carbonation is moderate, and the alcohol presence provides a very light, well-integrated warmth.
