Dovetail’s Festweizen elevates the classic Weissbier into a robust, festive experience with an amplified malt backbone. Deepening the traditional profile, it presents a rich tapestry of banana bread crust and warm caramel. High-intensity aromas of clove spice and banana flambé lead into a decadent palate featuring notes of sun-dried dates and spicy phenols. Despite its strength and complex malt sweetness, the finish remains relatively dry and effervescent. This interpretation offers a snuggly, autumnal take on the style, blending the creamy, fluffy texture of wheat with the depth of a celebratory harvest ale.
Appearance. Deep gold to light amber; hazy and luminous with a very thick, moussy, long-lasting off-white head and excellent lacing.
Aroma. High intensity esters and phenols; prominent banana flambé and clove spice dominate, supported by a rich bready, doughy wheat character with distinct notes of caramel and sweet dates.
Taste. Initial impression of rich banana bread and caramelized wheat; moderate banana and clove flavors are well-balanced by dark fruit notes of dates. Bitterness is very low, ensuring a well-rounded, flavorful palate with a relatively dry and clean finish.
Mouthfeel. Medium-full body with a fluffy, creamy fullness; high carbonation provides an effervescent, spritzy lift; subtle, well-integrated alcohol warmth is present.
