Dougall’s

Abyssal is a monumental Imperial Stout that plunges into sensory depths with a dense, opaque presence. The complex grist, featuring Maris Otter, Munich, and Chocolate malts, creates a rich foundation of bittersweet cacao, espresso, and black licorice. Roasted Barley and Black malt add intense charred notes, while flaked oats provide a luxurious, velvety texture. Magnum and Chinook hops contribute a firm, resinous bitterness that counters the deep malt sweetness. A unique addition of sea salt flakes sharpens the focus of the chocolate and coffee flavors, while the 10% alcohol remains remarkably well-integrated and warming.

Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, persistent deep tan head. High viscosity creates visible legs on the glass.

Aroma. Intense roast, dark chocolate, and espresso. Significant notes of black licorice and cocoa. A low resinous and spicy hop character from Chinook is present, alongside light dark fruit esters like prune.

Taste. Intensely flavored with bittersweet chocolate, scorched grain, and strong coffee. The complex malt bill including Brown and Crystal 400 malts provides a caramel-toast backbone. Sea salt enhances the savory-sweet balance. Finishes with a lingering roast and firm bitterness.

Mouthfeel. Full to very full-bodied, chewy, and velvety. Smooth, noticeable alcohol warmth. Low to moderate carbonation.
