This Double IPA delivers a lush, contemporary sensory experience, defined by its silky and substantial grist of Oats and Wheat. The appearance is characteristically hazy, supporting an aromatic explosion of tropical and resinous notes. Simcoe provides a foundation of pine and passionfruit, while Amarillo and Mosaic contribute layers of ripe mango, apricot, and bright citrus. The palate follows the nose with intense fruit saturation and a firm, integrated bitterness that balances the soft, bready malt core. Despite its high strength, the finish remains remarkably smooth with a lingering citrus resin, showcasing a clean fermentation and well-hidden alcohol warmth.
Appearance. Pale gold to light orange (7-9 SRM). Pours with a thick, persistent off-white head that leaves dense lacing. Pronounced haziness with an opaque quality due to the heavy use of adjunct grains.
Aroma. High intensity hop aroma dominated by mango, apricot, and tangerine. Significant resinous and piney undertones are present, supported by a low, grainy, bready malt character. Fermentation is clean with only very subtle fruity esters.
Taste. Initial impression is a burst of tropical fruit and citrus oils. Complex flavors of mango, stone fruit, and resinous pine from the heavy hop additions. Moderately high bitterness that provides a firm structure without being harsh or astringent. Low bready malt flavor provides a soft backdrop. Finishes medium-dry with a long, fruity, and slightly resinous aftertaste.
Mouthfeel. Medium-full body with a creamy, silky texture derived from the oats and wheat. Moderate carbonation. A smooth, restrained alcohol warmth is noticeable but well-integrated into the overall profile.
