This Specialty Cider captures the essence of Hood River terroir through a rustic, skin-contact pet-nat fermentation. A delicate yet complex sensory profile emerges, led by bright aromas of citron and succulent ripe pear. The skin-contact process introduces a sophisticated structure, balancing the naturally high carbonation of the ancestral method with a subtle, earthy tannic grip. At 7.5% ABV, it presents a crisp, bone-dry character that highlights the pure fruit expression of the apples, finishing with a refreshing, citrus-tinged acidity and a clean, mineral-driven persistence that reflects its artisanal origins.
Appearance. Pale gold to straw color with a light, natural haze characteristic of the pet-nat style. Pours with a lively, fine-beaded white mousse that dissipates quickly, leaving a faint ring of bubbles.
Aroma. Moderate to high intensity featuring bright notes of citron zest and ripe, fleshy pear. Secondary notes of fresh apple skin and a very light, earthy yeastiness from the ancestral method fermentation. Clean fermentation profile with no sulfur.
Taste. Initial impression is bone-dry and tart. Flavors of underripe pear and lemon pith dominate the mid-palate.
