This Straight Sour Beer presents a sophisticated interplay of rustic garden fruit and three years of patient oak maturation. A vibrant, sharp lactic acidity serves as the primary canvas for the distinctive, vegetal tang of rhubarb and the delicate, aromatic sweetness of strawberry. The extended wood aging integrates subtle whispers of vanilla and a structured tannic dryness into the crisp, biscuity pale malt base. Effervescent and bright, the profile evolves from an initial lemon-like sharpness into a nuanced red fruit complexity, finishing exceptionally dry with a lingering berry perfume and a clean, woody elegance that belies its strength.
Appearance. Color is pale gold with distinct pinkish-orange hues (4–7 SRM). Large, off-white head with a faint rosy tint, though retention is moderate to poor. Clarity is characterized by a slight haze from the fruit and long aging.
Aroma. High intensity sourness with a sharp, clean lactic character. The bouquet is dominated by tart rhubarb and jammy strawberry notes, supported by subtle biscuity malt. Hints of vanilla and dry wood from the oak are present, alongside moderate fruity esters of lemon and tart apple.
Taste. A bold, clean lactic sourness is the immediate impression. Malt flavor is low, providing a light bready and crackery support. The flavor profile is defined by the sharp, acidic bite of rhubarb followed by a secondary strawberry sweetness. Hop bitterness and flavor are undetectable. The finish is bone-dry and crisp, with a lingering fruit-skin astringency and a subtle, refined oak character in the aftertaste.
