This Imperial Stout represents a profound exploration of dark malt depth and barrel-driven complexity. Created in collaboration with Beerclub.ie, the beer presents a commanding presence of bittersweet chocolate, espresso, and charred grain. The barrel aging introduces sophisticated layers of toasted oak and soft vanillin, which intertwine with dark fruit esters reminiscent of dried figs and black currants. At 9.5% ABV, the alcohol is expertly integrated, providing a smooth, velvety warmth that enhances the luxurious, chewy texture. Every sip balances intense roasted bitterness against a sturdy malt backbone, finishing with a lingering, wood-inflected resonance that defines the style’s most robust interpretations.
Appearance. Jet black and completely opaque (40 SRM). Crowned by a dense, persistent dark tan head that leaves thick lacing. High viscosity is evident through visible legs on the glass.
Aroma. High intensity. Rich aromas of dark chocolate, roasted coffee beans, and black licorice dominate, complemented by barrel-aged notes of vanilla and toasted oak. Subtle background esters of prunes and raisins are present.
Taste. Initial impression is of deep, bittersweet cocoa and heavily roasted malt. Mid-palate reveals caramel sweetness, burnt grain, and a complex dark fruit character. The barrel aging contributes a dry oak tannin and vanilla sweetness. Bitterness is firm and balancing, leading to a long, warming finish of roasted malt and toasted wood.
Mouthfeel. Full-bodied and viscous with a velvety, luscious texture. Carbonation is moderate-low, enhancing the beer's creamy weight. A smooth, integrated alcohol warmth is present without being sharp.
