This sophisticated Saison presents a vibrant interplay between rustic fermentation and the complex influence of Madeira barrels. At 7% ABV, it leads with a high-intensity bouquet of stone fruits and black pepper, characteristic of a classic Belgian yeast profile. The barrel aging introduces distinctive oxidative layers of toasted nuts, caramel, and dried apricot that wrap around a lean, grainy malt base. Effervescent and highly attenuated, the palate balances firm hop bitterness with a vinous acidity. The finish is remarkably dry, leaving a lingering impression of spicy yeast and sophisticated, woody fortified wine nuances.

Appearance. Deep gold to pale amber (8-10 SRM). Features a dense, rocky, ivory head with excellent retention and significant Belgian lace. The liquid is unfiltered, showing a slight haze, and is highly effervescent.

Aroma. Moderate-high intensity featuring fruity esters of ripe pear and orange zest. These are joined by spicy black pepper phenols and the notable influence of Madeira barrel aging, which adds aromas of golden raisins, toasted almonds, and faint caramel. Low earthy hops and a light, grainy malt backbone provide support.

Taste. Initial impression is bone-dry and spicy. Malt flavor is low and grainy, quickly overtaken by citrus fruit esters and the complex, vinous character of the Madeira barrels, which contributes dried fruit and a nutty depth. Hop bitterness is moderate but firm, providing structure. The finish is very dry and clean with a lingering peppery aftertaste and a subtle oak tannin.
