This Imperial Stout presents a sophisticated sensory journey, shaped by maturation in American oak ex-bourbon and Two Stacks whiskey barrels. The initial impact is a rich tapestry of dark chocolate and roasted coffee, softened by the aromatic influence of the wood. Distinctive vanilla and sweet oak spice from the American oak integrate seamlessly with the deep roasted grains. Despite its strength, the beer maintains a rounded character, finishing with a surprising biscuity malt note that balances the intense barrel-aged complexity. It offers a harmonious blend of spirit-forward warmth and decadent layers, exemplifying a refined, barrel-influenced take on the style.
Appearance. Jet black and opaque (40+ SRM). Pours with a dense, deep tan head with moderate retention and light lacing. High viscosity is apparent in the glass through thick legs.
Aroma. High intensity with a rich blend of bittersweet chocolate and roasted espresso. Strong barrel-derived notes of vanilla, toasted oak, and spicy whiskey are prominent. Subtle dark fruit esters like dried figs complement a background of caramel and biscuity malt.
Taste. Initial impression is a complex mix of dark chocolate and coffee roast. The mid-palate reveals smooth whiskey character and oak spice, including hints of vanilla. Bitterness is medium-high but well-balanced by a residual malty sweetness. The finish is lingering and warm with a final note of toasted biscuit and cocoa.
Mouthfeel. Full-bodied and chewy with a velvety, luscious texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is noticeable and well-integrated into the finish.
