DOT Brew Simple Simcoe IPA
This Hazy IPA showcases the versatile Simcoe hop through a double dry-hopping process, supported by a lush grist of Irish barley, flaked and malted oats, and pale wheat. The aroma is an intense bouquet of passion fruit, pine resin, and bright grapefruit, bolstered by the tropical complexity of the Cryo Pop blend used in the whirlpool. On the palate, the soft, pillowy texture of flaked barley and oats provides a smooth foundation for flavors of ripe apricot and citrus zest. It finishes with a restrained bitterness and a lingering, juicy fruit character that highlights the hop-forward intent of this modern ale.
Appearance. Pours a hazy, pale gold (SRM 4) with a luminous, opaque shine. A thick, meringue-like white head persists with excellent retention, leaving significant lacing on the glass as it recedes.
Aroma. High intensity hop-driven aroma featuring pronounced notes of passion fruit, pine, and earthy berry, complemented by a tropical fruit salad character. A background of bready, grainy malt and light cracker is present, with neutral fermentation esters.
Taste. The initial impression is a wave of juicy mango and stone fruit. Moderate hop flavor mirrors the aroma, transitioning into a soft, bready malt mid-palate. Bitterness is moderate and well-integrated, providing balance without harshness. The finish is off-dry, smooth, and showcases a late bloom of citrus oils.
Mouthfeel. Medium-full body with a remarkably soft, pillowy texture and no astringency. Carbonation is moderate, contributing to a creamy sensation on the tongue. A light, well-integrated alcohol warmth is present.
