This vibrant Saison delivers a modern take on the classic farmhouse tradition, balancing rustic yeast character with a contemporary hop profile. At its core, the fermentation provides a spicy backdrop of cracked black pepper and subtle pome fruit esters. The addition of Idaho 7 hops elevates the sensory experience, introducing bright layers of juicy pineapple, zesty grapefruit, and a touch of resinous pine. Its lean, highly-attenuated body ensures a crisp, refreshing mouthfeel that accentuates the grainy malt foundation. Effervescent and bone-dry, this ale showcases a harmonious blend of old-world spicy phenols and new-world tropical hop intensity.

Appearance. Pale straw to light gold (4-6 SRM) with a brilliant to slightly hazy clarity likely resulting from the dry hop. It is topped by a dense, long-lasting, rocky white head that leaves significant Belgian lace on the glass as it recedes.

Aroma. High intensity aroma led by a fusion of tropical hop notes—specifically pineapple and mango—and citrusy pink grapefruit. This is underpinned by classic yeast esters of pear and apple, alongside a distinct spicy phenol resembling black pepper. Low, grainy malt sweetness and a faint resinous background.

Taste. The initial impression is bright and citrusy, quickly followed by a soft, grainy malt palate. Hop flavors of grapefruit and tropical fruit are prominent, merging with a moderate hop bitterness and spicy yeast phenols. The finish is exceptionally dry and crisp with a lingering peppery and citrus-peel aftertaste. Highly attenuated with no residual sweetness.

Mouthfeel. Light body with very high carbonation, creating an effervescent and prickly sensation on the tongue. No alcohol warmth is perceived at this sessionable strength. Crisp and refreshing with a clean, non-astringent finish.
