This Imperial Stout presents a decadent sensory profile shaped by its eleven-month maturation in French and American oak Irish potstill barrels. The aroma is dominated by bold milk chocolate and sweet plum, accented by the delicate vanilla and structural spice of the French oak. On the palate, it is exceptionally rich and lush, balancing intense roasted grain with the unique spicy, oily character of potstill whiskey. The interplay of dark malts and barrel-derived tannins provides a complex, warming finish. It is a harmonious marriage of wood and malt, delivering a velvet-like texture and a deeply sophisticated profile without becoming cloying.

Appearance. Jet black and opaque (40+ SRM). Pours with a dense, dark tan head with moderate retention and significant viscosity, leaving prominent legs on the glass.

Aroma. High intensity. Deep layers of bittersweet cocoa and milk chocolate blend with dark fruit esters of plum and raisin. Significant barrel influence provides vanilla, light coconut from the American oak, and a distinctive peppery, potstill whiskey spice. Low earthy hop notes.

Taste. Initial impression is powerfully rich, lead by milk chocolate and toffee. This transitions into complex dark fruit flavors and a robust roasted malt backbone. Medium-high bitterness balances the 12% ABV gravity. The finish is long and warming, revealing French oak spice, vanilla, and a lingering potstill spirit character that remains smooth and integrated.

Mouthfeel. Very full-bodied, chewy, and velvety. Moderate carbonation. Noticeable but smooth alcohol warmth. Very low astringency from the oak barrels despite the long aging period.
