This barrel-aged Doppelbock presents a sophisticated evolution of the traditional German strong lager. The influence of Irish whiskey and white wine barrels transforms the base malt profile, layering bright, vinous acidity over a foundation of rich, toasted Munich and Vienna malts. Aromas of fruity toffee and stone fruit arise from the wood, harmonizing with the natural Maillard complexity of the style. Despite its strength and barrel aging, the profile remains remarkably crisp and bright. The marriage of spirit-forward warmth and a clean lager fermentation results in a complex, full-bodied experience where deep caramel sweetness is balanced by a subtle, oak-derived dryness and a whisper of orchard fruit.
Appearance. Deep copper to dark brown (18–22 SRM) with vibrant ruby highlights; large, creamy, off-white head with persistent lacing and excellent retention. Clear to brilliant.
Aroma. High intensity with a dominant rich, toasted malt core. Prominent aromas of fruity toffee, dark bread crust, and light molasses. Subtle vinous notes of white grape and oak from the barrel aging intersect with a faint Irish whiskey grain sweetness. Low esters suggestive of plum or dried fig. No hop aroma.
Taste. Very rich and malty-sweet initial impression. Deep flavors of toasted bread, toffee, and caramelized sugars dominate the palate. Hop bitterness is moderately low (consistent with 20 IBU), providing just enough structure to keep the malt from becoming cloying. The barrel aging contributes nuances of vanilla, light spirit warmth, and a bright, fruity acidity. Clean fermentation profile with a lingering, smooth finish that balances residual sweetness with a touch of oak-derived dryness.
Mouthfeel. Medium-full body with a smooth, velvety texture. Moderate carbonation. A noticeable but gentle alcohol warmth is present, well-integrated with the whiskey barrel character. No harshness or significant astringency.
