DOT Brew’s BA Sea Sour presents a vivid sensory journey, blending the crisp, clean lactic acidity of a Straight Sour Beer with intricate fruit and wood layers. Maturation in White Wine Barrels introduces a sophisticated vinous depth and subtle tannic structure, complementing the vibrant, zesty punch of sea buckthorn. Pre-fermented raspberry contributes a delicate red berry brightness without overwhelming sweetness, weaving through a lean, crackery malt base. This bright, tart profile is defined by a high-toned fruit ester profile and a sharp, refreshing acidity that leads into a remarkably dry, clean finish.

Appearance. Pale straw with a soft pinkish-orange hue from the fruit; slight haze with a moderate white head that dissipates quickly to a thin ring.

Aroma. High intensity of clean lactic sourness and sharp lemon esters. Distinctive notes of tart raspberry and a zesty, tropical edge from sea buckthorn. Low crackery malt with a subtle vinous, oaky undertone from white wine barrel aging. No hop aroma.

Taste. Dominant, clean lactic sourness with a lemony and tart apple character. Low bready and grainy malt flavor provides a light foundation. Intense tart fruit notes of raspberry and citrusy sea buckthorn merge with a dry white wine character. Bitterness is undetectable. The finish is very dry, bright, and acidic with a lingering tart berry aftertaste.

Mouthfeel. Light body with high carbonation, creating an effervescent, crisp sensation. Acidity is sharp but not bitingly harsh. Very low alcohol warmth and a hint of tannic dryness from the wood.
