This Straight Sour Beer offers a vibrant sensory interplay between sharp lactic acidity and the nuanced character of Mezcal barrels. The profile opens with a bright, lemony tartness and fruity esters of apricot and green apple, immediately met by the distinctive earthy agave and whisper of woodsmoke from the barrel aging. Subtle notes of crackery pale malt provide a slender backbone for the botanical and slightly salty Mezcal influence. It finishes exceptionally dry and crisp, with a lingering citrus zest and a faint, refined oak tannin that elevates its refreshing qualities. The experience is bright, complex, and bracingly clean.
Appearance. Pale straw (2-3 SRM). Clarity is brilliant with high effervescence. Pours with a large, dense white head that exhibits poor retention, typical of the style's high acidity.
Aroma. High intensity of clean lactic sourness, leading with sharp lemon and tart green apple. Secondary aromas include a moderate fruity character of peach and apricot, supported by distinctive earthy agave and a faint hint of woodsmoke. No hop aroma is present; malt is restricted to a light, crackery background.
Taste. Clean, sharp lactic sourness dominates the palate. Light bready and crackery malt flavors provide a brief foundation before being overtaken by lemony acidity and vegetal agave notes. Hop bitterness is undetectable, and there is no hop flavor. The finish is bone-dry and crisp with a refreshing, lingering tartness and a touch of oak tannin.
Mouthfeel. Light body with high carbonation that provides a prickly, effervescent sensation. Crisp acidity is prominent. Alcohol warmth is very low and well-integrated, providing a refreshing and highly drinkable character without astringency.
