This Imperial Stout, a collaboration with Skellig Six18 Distillery, presents a profound sensory depth forged from a complex grist of ten distinct malts. The extended maturation in Triple Cask Potstill Ex-Bourbon Barrels imparts elegant layers of vanilla, toasted oak, and a distinctive potstill spice. A unique addition of Irish dillisk introduces a nuanced, mineral salinity reminiscent of the Wild Atlantic coast’s sea spray. Rich flavors of dark chocolate and espresso meld with dried stone fruits, while the high alcohol provides a smooth, integrated warmth. It is a harmonious, full-bodied experience where coastal brine meets the luxury of barrel-aged roast.

Appearance. Jet black and fully opaque (40+ SRM). It pours with a thick, persistent deep tan head that leaves oily lacing on the glass. Pronounced viscosity is evident through slow-moving legs when swirled.

Aroma. High intensity. A rich foundation of dark chocolate and charred grain is complemented by prominent barrel-derived vanilla and spicy potstill character. Esters of plum and raisin are present, underscored by a subtle, clean mineral note and a delicate briny hint of sea spray from the Irish dillisk.

Taste. Initial impression of massive bittersweet chocolate and roasted coffee. A complex malt profile follows, balanced by the spicy oak and dark fruit notes of the Skellig Six18 barrels. The Irish dillisk adds a savory, slightly saline dimension that enhances the malt sweetness without being overtly salty. Moderate-high bitterness provides structure, leading to a long, warming finish of vanilla and toasted wood.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A noticeable, smooth alcohol warmth glows in the throat but remains well-integrated and free of harshness or astringency.
