This American Pale Ale presents a vibrant sensory journey inspired by its Mediterranean roots. Utilizing Catalan organic malt alongside caramel malt, it offers a sturdy foundation for an expressive hop profile. Aromas of ripe fruit and unique green strawberry notes lead into classic West Coast signatures of citrus, resin, and pungent pine. While initially revealing a delicate sweetness from the caramel malt, the palate quickly transitions into a crisp, dry profile. The finish is defined by a firm, lingering bitterness that remains clean and refreshing. Despite being gluten-free, it maintains a full-flavored presence, balancing local artisanal ingredients with a bold, hop-forward character.
Appearance. Amber color (8-10 SRM). Features a dense, delicate, off-white head with good retention and light lacing. Generally clear to brilliant clarity.
Aroma. Moderate to high intensity. Dominated by hop-derived notes of citrus, resin, and pine, complemented by ripe fruit and subtle green strawberry. Low to moderate supportive malt character of caramel and toasted grain. Clean fermentation profile.
Taste. Initial impression of light caramel malt sweetness that is quickly overtaken by hop flavors of grapefruit citrus and resinous pine. High bitterness provides a firm structure. Finishes very dry and clean with a lingering, pleasant bitterness and an absence of harshness.
Mouthfeel. Medium body with moderate to high carbonation. Smooth texture without harshness or astringency. Very light, well-integrated alcohol warmth is appropriate for the strength.
