Afresh presents a unique sensory bridge between a classic American Pale Ale and the rugged Scottish coast. The hop profile leads with bright citrus and resinous pine, supported by a clean, grainy malt backbone. What distinguishes this organic spring ale is the integration of land and sea weeds, which introduce a subtle, savory herbal complexity and a faint, refreshing mineral salinity. This oceanic touch sharpens the moderate bitterness and enhances the beer’s crisp, medium-dry finish. At 5.2% ABV, it remains highly drinkable, balancing vibrant New World hop character with an intriguing, earthy umami depth that evokes a fresh coastal breeze.
Appearance. Pale golden with brilliant clarity; topped by a moderately large, frothy white head with excellent retention and delicate lacing (SRM 6).
Aroma. Moderate to high intensity featuring grapefruit zest and pine needles. A supportive low neutral grainy maltiness is present, uniquely layered with a faint herbal, 'green' earthiness and a whisper of briny sea air from the adjunct weeds.
Taste. Initial impression is hop-forward with flavors of citrus peel and resin. A clean, bready malt presence provides balance without adding sweetness. The seaweed contributes a subtle savory mineral note that complements the moderate bitterness. The finish is medium-dry and clean, with lingering hop oils and a crisp, refreshing aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively, scrubbing texture. Smooth finish with no alcohol warmth and a very slight, pleasant mineral crispness on the palate.

Afresh is a Spring Ale, essentially an organic Extra Pale Ale, heavily hopped with Wakatu for a floral and limey kick. The small and subtle addition of foraged sticky-willies and sugar kelp make for a cucumberry, botanical, grassy and fresh experience.
Dookit say “Back in November, on a dreich and dreary Glaswegian night, Federico Lubrani from Slow Food Glasgow, Peter McKenna from The Gannet and myself, got together to dream of Spring. The idea: to produce a light and refreshing ale while making the most of some intriguing and delicious seasonal foraged goods.
“We recruited the help of expert forager Amy Rankine< and herbalist aficionado and illustrator Indre Simkute. After little debate and much agreement the idea for an organic Extra Pale Ale flavoured with sticky-willies and sugar kelp came to fruition.
“Our experiments led us to the conclusion that less is more and to only add the land and sea weeds in very small amounts for a very brief steeping period. The seedlings of sticky-willies have a fresh cucumber note we thought would pair perfectly with New Zealand Wakatu and all the zesty-limey notes it’s renowned for. However, like any good and effective Spring tonic, you don’t want to be inundated with fruitiness. A savoury and very subtle saline character is secured with the addition of sugar kelp, not to mention the grassy greenness of the sticky-willies. The umami sugar kelp also bulks up the body & creates a silky soft mouthfeel.”
