This Scottish interpretation of a Gose delivers a vibrant sensory journey rooted in East Lothian coastal terroir. Balla-Mara pours with a bright, hazy yellow glow, releasing an aromatic profile defined by sharp lactic tartness and the distinctively citrusy, tropical tang of sea buckthorn. The palate is defined by a zingy acidity that highlights bready wheat malt and the unique mineral character of Blackthorn Scottish sea salt. This salt addition provides a savory, mouthwatering counterpoint to the fruit-forward zip of the sea buckthorn berries. Effervescent and exceptionally dry, it concludes with a clean, refreshing finish that captures a breezy, seaside essence.
Appearance. 3-4 SRM; pale yellow with a moderate to full haze. Features a tall, white head with tight bubbles and good retention; highly effervescent.
Aroma. Moderate intensity with a sharp lactic sourness. Prominent fruity notes of lemon and bright orange from sea buckthorn. Clean, bready wheat malt character with a subtle, fresh sea-spray minerality. No hop aroma or diacetyl.
Taste. Initial impression is zingy and tart. Medium-high lactic sourness is balanced by doughy, bready malt. Sea buckthorn adds a distinctive pome fruit and citrus complexity. The Blackthorn sea salt is noticeable but restrained, providing a mouthwatering, savory edge. Very low bitterness with no hop flavor. Finishes bone-dry with lingering acidity.
Mouthfeel. Medium-light body with very high, effervescent carbonation. The salt provides a tingly, mouthwatering quality on the tongue. Refreshing and crisp with no alcohol warmth or astringency.
