This one-year-old Lambic offers a vibrant and approachable expression of spontaneous fermentation, purposefully carbonated for a refreshing, simple, and fresh profile. It presents a bright lactic acidity paired with youthful fermentation notes of fresh hay and light citrus rind. The use of Pilsner malt and unmalted wheat provides a delicate, grainy backbone that supports a crisp, fruit-forward palate featuring hints of rhubarb and green apple. Without the heavy, earthy funk of long-aged versions, it remains lively and accessible, finishing very dry with a sparkling effervescence that cleanses the palate and emphasizes its nimble, summery character.
Appearance. Pale yellow to soft golden hue with a slight, youthful haze. Pours with a thin white head that dissipates quickly, leaving minimal lacing.
Aroma. Moderate intensity featuring sharp lactic sourness and bright notes of lemon zest and green apple. Subtle, fresh barnyard funk presents as dried hay and earthy wheat, with no detectable hop aroma.
Taste. Refreshingly sour with a dominant lactic character and light notes of rhubarb. The malt provides a low, bready, and grainy foundation. Hop bitterness is absent, allowing the acidity to balance the profile. The finish is remarkably dry and clean.
