Appearance. Very pale straw with a soft, rosy-pink hue from the elderberry additions; hazy to translucent clarity with a large, white, fizzy head that dissipates quickly.
Aroma. Moderate to high lactic sourness with a sharp, clean character. Prominent notes of raw sourdough and bready wheat are layered with tart elderberry and the sweet, slightly oxidized scent of stewed apple medlars. No hop aroma; light floral esters from the Brett presence.
Taste. Initial impression is a bright, clean lactic acidity that dominates the palate.
