Dois Corvos Double Mandible is a punchy Double IPA that expertly highlights a modern hop quartet of Citra, Cashmere, Idaho 7, and the concentrated punch of Cryo Pop. The sensory experience is dominated by an intense bouquet of ripe mango, lemon zest, and sweet melon, underscored by a subtle herbal pine. A lean barley malt profile provides a clean, slightly toasted foundation that allows the hops to shine without excessive sweetness. The finish is decisively dry and crisp, delivering a firm but smooth bitterness that lingers alongside a gentle, well-integrated alcohol warmth characteristic of its strength.
Appearance. Deep gold to light copper (8-10 SRM) with slight haze common in heavily dry-hopped versions. Features a moderate-sized, persistent, off-white head with significant lacing.
Aroma. High intensity hop aroma featuring prominent tropical fruit, citrus pith, and stone fruit. Notes of grapefruit from Citra and melon from Cashmere are balanced by Idaho 7's piney and earthy undertones. Malt is low and neutral, providing a light grainy background.
Taste. Strong hop-forward flavors of tropical papaya, lime, and resin. High bitterness that is firm but lacks harshness, balanced by a soft, unobtrusive malt character. Fermentation is clean with very low fruity esters. The finish is dry to medium-dry with a long, hoppy, and bitter aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate. A light, clean alcohol warmth is present but remains smooth and well-integrated, lacking any harsh astringency.
