Dionysus presents a sophisticated intersection of viniculture and brewing, highlighting the vibrant character of Alentejo’s Antão Vaz white wine grapes. The sensory profile is defined by a lively marriage of tropical fruit esters and the rustic, earthy complexity provided by Brettanomyces. Aging in oak barrels imparts a subtle structural tannic grip and faint vanilla nuances that support the vinous acidity. Aromas of ripe pear and citrus zest transition into a bone-dry palate, where the funky, leather-like notes of the wild yeast dance with a bright, sparkling carbonation. It is a nuanced Grape Ale that captures the essence of a fine Portuguese sparkling wine.

Appearance. Deep gold to pale amber (6-7 SRM). Frothy white head with moderate retention and light lacing. Generally clear, though a faint haze from the barrel-aging and wild yeast may be present.

Aroma. High intensity and complex. Dominant vinous notes of white grape, specifically pear and tropical fruit from the Antão Vaz variety. A distinct funk from Brettanomyces presents as hay, leather, and mild barnyard. Very low crackery malt and a touch of toasted oak; hop aroma is absent.

Taste. Immediate bright acidity and grape-forward flavors of lemon zest and green apple. The Brettanomyces provides a lingering earthy, spicy complexity. Low hop bitterness allows the dry, vinous character to shine. Malt is supportive and neutral, like a light biscuit. The finish is remarkably dry, crisp, and slightly tannic from the oak.

Mouthfeel. Medium-light body with a high, effervescent carbonation that mimics sparkling wine. A gentle, well-integrated alcohol warmth is present. No astringency, though a light oak-derived dryness lingers on the tongue.
