Dois Corvos Creature is a vibrant American IPA that masterfully bridges New World hop intensity with the refined character of British malt. Utilizing soft Lisbon water, the beer presents a delicate and smooth palate that allows the aromatic hop profile to explode with citrus and tropical fruit notes. The British malt provides a clean, toasty foundation that supports a firm but well-integrated bitterness. This combination results in a juicy and aromatic experience that remains exceptionally drinkable, culminating in a crisp, dry finish typical of the style while maintaining a sophisticated, layered complexity.
Appearance. Deep gold to light amber (7-10 SRM). Brilliant clarity with a dense, white, persistent head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring notes of grapefruit, orange peel, and subtle tropical melon. Low to medium-low bready and slightly toasty malt character. Clean fermentation profile with virtually no yeast-derived esters.
Taste. Strong hop-forward flavors of citrus zest and resinous pine. Medium-high bitterness that is assertive but lacks harshness. The malt provides a light biscuity and toasty support without being sweet. Finishes dry to medium-dry with a lingering, clean hoppy aftertaste.
Mouthfeel. Medium body with a smooth, soft texture. Moderate-high carbonation provides a lively mouthfeel. A very light, well-integrated alcohol warmth is noticeable but smooth.
