This collaborative Straight Sour Beer presents a complex, vinous character driven by the addition of local Chambourcin grapes. The use of carbonic maceration imparts bright, red berry-like esters that complement a sharp, clean lactic acidity. Nine months of aging in French oak wine barrels adds structured tannins and soft notes of toasted wood, rounding out the profile. Effervescent and refined, it showcases a sophisticated interplay between the earthy grape skins and a crisp, crackery malt base. The result is a vibrant, wine-like sensory experience that balances intense tartness with sophisticated depth and a bone-dry, refreshing finish.
Appearance. Ranging from 3 to 6 SRM with a distinct rose or light ruby tint from the Chambourcin grapes. Displays a moderate white to pink-tinged head with fair retention and high effervescence; clarity is slightly hazy due to the mixed culture and fruit.
Aroma. High intensity aroma dominated by sharp lactic sourness and vinous grape notes. Distinctive fruity esters of raspberry and cherry from carbonic maceration blend with subtle vanillin and toasted notes from French oak wine barrels. No hop aroma is present; a faint crackery malt back-end persists.
Taste. Intense initial impression of clean lactic acidity and tart red grape. The flavor is deeply vinous with Chambourcin fruit character, supported by a light, bready malt presence. Hop bitterness is undetectable. The finish is very dry and crisp with lingering notes of grape skin and a subtle oak-derived tannic structure.
Mouthfeel. Medium-light body with high carbonation that enhances the perceived acidity. A light, pleasant alcohol warmth is present, complemented by a touch of oak-derived astringency and a crisp, clean mouthfeel.
