This sophisticated American Wild Ale highlights a masterfully balanced marriage of fruit and wood. The 2019 vintage of Festina Lente showcases a massive addition of fresh Delaware peaches against a backdrop of complex Brettanomyces funk and bright lactic tartness. Having rested for eighteen months in Chardonnay barrels, the beer reveals elegant vinous notes and soft oak tannins. This Brett Beer is remarkably effervescent, balancing the lush stone fruit character with a bone-dry, champagne-like finish. It represents a culinary approach to wild fermentation where delicate peach esters harmonize with earthy, barnyard nuances and a crisp, refreshing acidity.
Appearance. Deep gold to pale orange with a distinct peach-hued tint (SRM 5-7). Features a frothy white head with moderate retention and delicate lacing. Persistent hazy clarity due to the heavy fruit addition and wild yeast sediment.
Aroma. High intensity with a dominant perfume of fresh peach skin and sun-ripened stone fruit. Secondary notes of earthy Brettanomyces funk, including wet hay and light leather, are complemented by vinous Chardonnay grape and a touch of toasted oak. Malt character is nearly absent, presenting only a faint crackery backdrop.
Taste. An initial burst of tart Delaware peaches and dried apricot leads into a complex fermentation profile. The malt flavor is minimal and bready, allowing the lactic acidity and wild funk to shine. Hop bitterness is very low, providing just enough structure. The finish is exceptionally dry and lingering, characterized by peach esters, a subtle woody astringency, and a clean, puckering acidity.
Mouthfeel. Medium-light body with high, effervescent carbonation that mimics champagne. Alcohol warmth is very subtle and well-integrated. Features a light tannic grip on the palate from the eighteen months of barrel aging, with no heavy syrupy texture despite the fruit volume.
