BoDeGose presents a vibrant, contemporary interpretation of the Gose style, blending historical tartness with an urban bounty of ingredients. A soft, doughy wheat base supports a lush fruit profile where ripe cherries offer a subtle stone-fruit depth against the bright, tropical punch of guava. The traditional coriander character is replaced by the delicate, earthy spice of pink peppercorns, providing a floral, woodsy complexity that complements the refreshing lactic acidity. A refined salt presence rounds out the palate, enhancing the juicy fruit notes while leading to a crisp, effervescent finish that remains remarkably dry, balanced, and sessionable.

Appearance. SRM 4–7; soft pink to light coral hue with a moderate to full haze. Moderate off-white to pale pink head with tight bubbles and good retention; highly effervescent.

Aroma. Moderate to high intensity. Dominant aromas of tropical guava and tart red cherries over a base of doughy, bready wheat malt. A distinct earthy and floral spice from pink peppercorns replaces traditional coriander. Clean lactic acidity provides a bright, lemony lift. No hop aroma.

Taste. Initial tartness is balanced by bready, doughy malt flavors. Vibrant notes of exotic guava and ripe cherries dominate the mid-palate, accented by the earthy, slightly resinous spice of pink peppercorns. Very low bitterness. A restrained salt character enhances the fruitiness and provides a savory, mouthwatering quality. Finishes dry and crisp with lingering acidity and a hint of fruit skins.

Mouthfeel. Medium-light body with high, effervescent carbonation. The salt addition provides a slightly tingly, mouthwatering sensation and a rounded texture. Crisp and refreshing without any noticeable alcohol warmth.
