Quercus 23 is a decadently layered Imperial Stout that harmonizes intense roasted elements with sophisticated barrel aging. Deep aromas of freshly roasted coffee and dark chocolate lead into a luxurious palate where the sweetness of maple syrup and smooth vanilla softens the bold malt profile. The dual influence of Rum and Bourbon barrels contributes notes of spicy oak, molasses, and toasted coconut, adding profound depth to the dark fruit esters. It pours ink-black with a dense tan head, offering a velvety texture and a lingering, warming finish that balances bittersweet cocoa with a touch of barrel-derived spirit complexity.
Appearance. Jet black and opaque (40 SRM). Features a thick, creamy, deep tan head with moderate retention and visible viscosity in the form of oily legs on the glass.
Aroma. High intensity. Dominant notes of freshly ground coffee and dark bittersweet chocolate are complemented by aromatic vanilla and the woody sweetness of maple syrup. Substantial barrel character follows, exhibiting bourbon-soaked oak and dark rum molasses, with background esters of raisins and prunes.
Taste. An initial impression of rich maple sweetness and chocolate fudge gives way to intense roasted coffee and charred malt. The mid-palate reveals complex barrel notes of toasted oak, vanilla, and caramel. Hop bitterness is moderate but firm, balancing the sweetness to ensure a finish that is lingering and bittersweet rather than cloying. Mouthfeel. Full-bodied and viscous with a chewy, velvety texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth from the bourbon and rum barrels provides a comforting glow without being sharp or fusel.
