Docker Brewery Hythe Bay

This thirst-quenching Ordinary Bitter celebrates local terroir by showcasing community-grown Kent Hops alongside modern varieties. A delicate biscuity malt base supports an expressive hop profile where the dark berry and earthy spice of Kentish Bullion meet the vibrant citrus and tropical notes of Simcoe and Mosaic. It pours a clear light copper with a moderate off-white head. The palate is balanced toward a refreshing bitterness, delivering flavors of pine and stone fruit before concluding with a crisp, dry finish. Highly sessionable, it bridges the gap between traditional British session brewing and modern, hop-forward aromatics.
Appearance. Pale amber to light copper (approximately 9-12 SRM). Brilliantly clear with a low-to-moderate white head and light lacing.
Aroma. Moderate malt intensity featuring toasted biscuit and bready notes. Moderate hop character with earthy resin, citrus zest, and a hint of tropical fruit. Low fruity esters with no diacetyl.
Taste. Initial impression of dry, biscuity malt followed by a firm, medium-high bitterness. Hop flavors provide notes of pine, grapefruit, and lingering earthy spice. Clean fermentation character with a decidedly bitter balance and a crisp, dry finish.
Mouthfeel. Medium-light body with moderate carbonation. Smooth texture with very low alcohol warmth and no astringency.

Meet The Brewery Dockers Brew Co began in 2006 in a small shipping container in the East Yard at Folkestone Harbour. Founders Wesley Burden and Peter Nelson brought together their shared love for two fermentation processes, craft brewing and sourdough baking, to produce high quality classic products with a modern edge. Docker has grown into a thriving retailer, wholesaler and community providing exceptional bread and beer across East Kent. Docker Brew Co strives to produce the finest craft ales, beers and naturally fermented sodas. They use the highest quality UK malts, interesting contemporary yeast variants and juicy, vibrant and dank hops from UK and New World locations. Their beer draws on the brewing history of this country, bringing classic styles into the modern age to be reimagined and reinvigorated. Their primary in house style is a fruit-forward and dank hop profile on a light pale malt base with a soft mouthfeel and juicy yeasts to help bring out the best of the fermentation process.Believing good beer should be full of flavour with all the vibrancy that modern brewing processes and ingredients can offer. Alongside great beers Dockers also produce a range of seasonal natural ferments, such as ginger beer, sparkling elderflower and cherryade. They source the finest fresh and local ingredients and keep the contents honest and simple with no additional flavourings or colourings. By cultivating the yeasts which live naturally on the fresh ingredients setting off a wild fermentation process which produces a very mildly alcoholic beverage full of naturally occurring flavour.Dockers also aim to to work in as sustainable a way as possible paying attention to the impacts that the brewing process has upon the environment. Using reusable kegs and fully recyclable aluminium cans with compostable PLA wrapping wherever possible ensures to help preserve the ecological conditions which give them the exceptional ingredients used in all their beers and ferments.
