Diggers Fine Cider Ltd

Tofaa is a sophisticated Scottish Cider crafted from a hand-picked blend of local eating and cooking apples. Spontaneously fermented with wild yeasts and matured in a combination of stainless steel, ex-sherry casks, and virgin chestnut barrels, this Pet Nat style cider presents a lively, natural sparkle. The bouquet is defined by crisp green apple and delicate elderflower, underpinned by a distinct minerality and subtle oak influences. On the palate, layered acidity provides a bright, refreshing structure, while the chestnut and sherry wood contribute a faint, refined tannin. It is a wonderfully fresh, complex expression of wild fermentation and artisanal maturation.

Appearance. Straw to light gold with a gentle, natural haze from the Pet Nat conditioning. Pours with a light, effervescent white head that rapidly dissipates, leaving a clean rim.

Aroma. High intensity with prominent notes of fresh green apple and floral elderflower. Secondary layers reveal a distinct minerality, light nutty hints from the sherry wood, and a faint, sweet woodiness from chestnut, all backed by a clean, wild yeast character.

Taste. Initial impression is bright and tart, featuring sharp green apple flavors. Mid-palate introduces a complex, layered acidity and subtle floral notes. The finish is dry and crisp, with a tiny smidge of tannin and lingering oaky nuances that provide structure without harshness.

Mouthfeel. Medium-light body with a brisk, prickly carbonation typical of the Pet Nat method. Low astringency from the wood aging, with a refreshing, clean mouth-coating acidity and no perceptible alcohol warmth.
