Corne du Diable presents a compelling bridge between traditional English IPA roots and the assertive character of North American brewing. This red-hued ale showcases a robust malt foundation where rich caramel and toasted biscuit notes provide a sturdy platform for an aggressive dry-hopping regimen. The sensory profile is dominated by a potent hop presence, exhibiting sharp floral and citrus-orange qualities that reflect its West Coast inspiration. At 6.5% ABV, the beer remains well-attenuated, delivering a clean, lingering bitterness and a medium-dry finish. It successfully balances the structural elegance of British pale ales with the punchy, aromatic intensity demanded by contemporary palates.

Appearance. Deep copper to reddish-amber color (approx. 13-14 SRM). Clear with a slight haze from dry hopping; features a moderate-sized, persistent off-white head with good lacing.

Aroma. Moderately high intensity hop aroma featuring floral, spicy-peppery, and citrus-orange notes. Supporting malt character provides medium-low bready and toasted biscuit scents alongside a distinct caramel sweetness. Low fruity esters.

Taste. Initial malt impression of toasted bread and toffee-like caramel. Medium-high hop flavor mirrors the aroma with citrus and spicy notes. Hop bitterness is assertive and sharp, dominating the balance but supported by the malt. Finish is medium-dry with a lingering, clean bitterness in the aftertaste.

Mouthfeel. Smooth, medium body with medium-high carbonation that enhances the dry finish. A light, smooth alcohol warmth is present but well-integrated. Free of hop-derived astringency.
