DEYA's gluten-free brands are made by removing the gluten content from barley and wheat using an enzyme that reduces the gluten content to a level considered gluten-free by UK and EU law.
This is verified for each batch of GF beer by an external, UKAS-accredited laboratory before the batch is released for sale. 
The reason why BARLEY and WHEAT are still listed on the label is to enable the consumer to distinguish them from GF products made from naturally gluten-free cereals and pseudo-cereals and make a personal choice as to whether they are right for them.
