Deya Brewing Company

This stainless-aged mixed fermentation Saison from DEYA presents a vibrant, contemporary take on the style. The aromatics are dominated by a bright lemon zestiness and distinctive hay-like funk, characteristic of a clean Brettanomyces influence. Its fermentation profile is exceptionally crisp, driven by a rustic grain bill that supports moderate peppery phenols and pome fruit esters. On the palate, a refreshing acidity cuts through the light, effervescent body, leading to a bone-dry finish. The absence of heavy barrel traits allows the delicate interplay of spicy yeast and citrusy tartness to remain at the forefront, creating a highly drinkable, sophisticated farmhouse ale.

Appearance. Pale straw to gold in color with a slight haze from the mixed fermentation. Features a dense, long-lasting, rocky white head with significant Belgian lace. Highly effervescent.

Aroma. Moderate to high intensity. Dominated by bright lemon citrus and earthy hay. Complemented by spicy black pepper phenols, faint pome fruit esters, and a light, crackery malt graininess. No detectable hop aroma, focusing instead on the fermentation complexity.

Taste. Refreshingly acidic and bright. Initial impressions of tart lemon and rustic hay are followed by a soft, grainy malt backbone. Very high attenuation results in a bone-dry finish with a lingering peppery spice and a clean, puckering tartness that replaces traditional hop bitterness.

Mouthfeel. Light to medium-light body with very high, effervescent carbonation. Prickly on the tongue with a clean, acidic bite. Very low alcohol warmth, staying crisp and refreshing throughout.
