This classic Double IPA pays homage to Californian brewing icons, delivering an assertive and resinous sensory experience. A potent blend of Amarillo, Centennial, Citra, and Simcoe hops creates a layered aromatic profile of pungent pine, grapefruit zest, and bright floral notes. On the palate, a firm 80 IBU bitterness provides a clean, sharp edge that is expertly balanced by a supportive, slightly grainy malt base. The 8% alcohol provides a smooth, warming presence without being solventy. It finishes exceptionally dry and crisp, leaving a lingering trail of citrus oil and hop resin that invites another sip.

Appearance. Pours a clear, deep gold to pale copper with a moderate-sized, persistent off-white head that leaves consistent lacing on the glass.

Aroma. Intense hop-forward aroma featuring heavy resin, pine, and grapefruit zest from the Simcoe and Centennial. Subtler notes of orange peel and wildflowers emerge as it warms. The malt remains in the background as a clean, neutral graininess with a very faint hint of toasted bread.

Taste. High hop bitterness is immediate but clean and lacking harshness. Flavors of citrus oil, resinous pine, and tropical fruit dominate the palate. The malt provides a light, soft support with a clean, crackery character. It finishes very dry with a long, lingering hoppy bitterness and a clean fermentation profile.

Mouthfeel. Medium body with a smooth, slightly oily texture from the hop resins. Carbonation is medium-high, providing a crisp bite. A light, smooth alcohol warmth is present but well-integrated, without any harsh astringency.
