Deschutes Brewery The Abyss Rum (2017)

Imperial Stout 13.9 º 80 IBU
This vintage Imperial Stout presents a decadent sensory experience, defined by ten months in rum barrels that impart deep notes of spiced molasses and toasted oak. The 2017 edition showcases a masterfully integrated profile where the addition of black strap molasses and licorice provides an earthy, bittersweet foundation. Nuanced layers of cherry bark offer a subtle tannic snap, while whole vanilla beans soften the edges of the 13.9% alcohol content with a creamy, dessert-like smoothness. Expect a complex interplay of charred malt, dark fruit esters, and a lingering, spirit-forward warmth that reflects its lengthy maturation and sophisticated ingredient list.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, deep tan head that shows moderate retention and leaves oily legs on the glass, indicating high viscosity and alcohol content.
Aroma. High intensity aroma featuring a rich blend of bittersweet chocolate, espresso, and heavy black strap molasses. The rum barrel aging contributes prominent notes of dark sugar, vanilla beans, and a hint of spice. Esters of dried plums and black currants are present, complemented by the woody, slightly medicinal scent of cherry bark and licorice.
Taste. The initial impression is massive and complex, dominated by roasted grains, dark chocolate, and savory molasses. Licorice and cherry bark provide a unique herbal depth, while the whole vanilla beans and rum influence add flavors of caramel and spice-laden oak. High bitterness is well-countered by the thick malt body. The finish is long and warming with a lingering bittersweet cocoa and spirit-forward character.
Mouthfeel. Very full-bodied, chewy, and luscious with a velvety, syrupy texture. Carbonation is low to moderate, enhancing the beer's weight. A significant, smooth alcohol warmth is present throughout, though it remains well-integrated rather than sharp.
