This 2015 vintage of the Imperial Stout is a masterclass in complexity, transformed by a decade of maturation. Deep aromas of black strap molasses and dark chocolate entwine with the sophisticated, vinous warmth of cognac barrels. The addition of licorice and cherry bark provides a structured, herbal spice and subtle tartness, while vanilla softens the edges with a creamy finish. Expect a luscious, velvety texture where the initial roasty intensity has evolved into notes of dried plums, figs, and toasted oak. The finish is long and warming, balancing decadent sweetness with a refined, earthy bitterness and a hint of brandy.

Appearance. Jet black (SRM 40+). Deep tan head with low to moderate retention and thin lacing. Opaque. High viscosity creates visible legs on the glass.

Aroma. High intensity. Rich bittersweet chocolate, espresso, and black strap molasses. Distinct vinous and port-like notes from age, blended with cognac, vanilla, and toasted oak. Moderate esters of raisins, prunes, and figs. Subtle herbal spice from licorice.

Taste. Intense layers of dark chocolate, molasses, and licorice. The mid-palate introduces earthy cherry bark and creamy vanilla. Medium-high bitterness is smoothed by age. Cognac-barrel influence contributes grape-like fruitiness and oak tannins. Finish is long and warming with a lingering bittersweet cocoa and brandy character.
