Dribble is a vibrant Wild Specialty Beer that captivates with a nostalgic candy-shop profile. It leads with a dominant bouquet of ripe raspberry and sharp red cherry, underpinned by a whimsical, spun-sugar note reminiscent of cotton candy. The kettle-souring process provides a bright, clean lactic acidity that balances the perceived sweetness of the added lactose. While the fruit character is bold and expressive, the malt remains subtle, providing just enough backbone to carry the tart berry and stone fruit layers. The result is a playful, dessert-leaning sour that finishes with a crisp, tangy snap and a lingering berry confectionary essence.
Appearance. Deep pink to light ruby in color (15-20 SRM); moderate pink-tinted head with fair retention and light lacing. Generally hazy to opaque due to heavy fruit addition.
Aroma. High intensity aromatics of fresh raspberry and tart cherry. A distinct, sweet confectionary note like cotton candy is prominent. Very low malt aroma; no hop aroma. Clean lactic sourness is evident but not pungent.
Taste. Initial punch of tart red berries and cherries, followed by a soft, creamy sweetness from the lactose. The cotton candy element adds a whimsical candy-like layer. Moderate sourness is clean and refreshing, with very low hop bitterness. Malt flavors are neutral and grainy. The finish is balanced between tart fruit and residual sugar.
Mouthfeel. Medium body, enhanced by the addition of lactose which provides a smooth, slightly creamy texture. Moderate to high carbonation provides a lively, refreshing prickle. Low alcohol warmth; no astringency.
