This vibrant Catharina Sour, a collaboration with Juguetes Perdidos, delivers an immediate, high-intensity rush of fresh cassis, showcasing concentrated notes of dark berries and tangy currants. The sensory experience is defined by a clean, lactic acidity that sharpens the palate, beautifully balancing the fruit's natural vibrancy against a subtle, neutral backdrop of bready malt. The fermentation remains exceptionally clean, ensuring the pure expression of the blackcurrants takes center stage without any yeast-derived funk. Effervescent and refreshing, the beer concludes with a crisp, dry finish that emphasizes its fruity complexity and lively, thirst-quenching character.
Appearance. Deep purple to intense violet in color. Thin, light pink head with moderate retention and light lacing. Slight haze is present due to the heavy fruit addition.
Aroma. High intensity of fresh blackcurrant (cassis) providing a sharp, tart berry aroma. Complemented by a clean, lactic sourness. Minimal malt presence, appearing only as a hint of white bread or raw grain. No hop aroma or funk.
Taste. Assertive lactic acidity and bold blackcurrant flavor dominate the initial impression. Very low malt sweetness, providing a crackery, neutral grain structure. No hop bitterness or hop flavor is present. Clean fermentation profile leads to a dry, tart, and intensely fruity finish with a lingering berry aftertaste.
Mouthfeel. Medium-light body with a crisp, refreshing texture. High carbonation provides a lively, effervescent bite. Minimal alcohol warmth and no notable astringency from the fruit skins.
