Say My Name by Deer Bear bridges the gap between coastal philosophies, delivering a Modern West Coast IPA that emphasizes high-impact aromatics without sacrificing structure. A double dry-hopping regimen yields a burst of tropical juice and bright citrus, reminiscent of modern hazy profiles, yet it remains anchored by a crisp, lean malt base. As the initial wave of mango and grapefruit recedes, a firm, resinous bitterness emerges, driving a decidedly dry finish. This hybrid approach ensures a vibrant, sensory-forward experience where the plush fruitiness of contemporary hop varieties meets the assertive, palate-cleansing snap typical of the classic West Coast style.
Appearance. Medium gold (6 SRM) with a slight, modern haze. Features a thick, persistent white head with fine-textured lacing and good retention.
Aroma. High intensity hop aroma dominated by tropical fruit notes of mango and passionfruit alongside bright grapefruit zest. A subtle piney resin and floral undertone adds complexity. The malt is low and clean, offering a faint cracker-like scent, while the fermentation profile is neutral.
Taste. Initial flavors of juicy pineapple and citrus lead into a firm, assertive hop bitterness that defines the mid-palate. The malt presence is minimal, providing support with a dry, grainy-sweet character. It finishes very dry and clean with a lingering resinous and grapefruit-peel bitterness.
Mouthfeel. Medium-light body with a smooth, crisp texture. Carbonation is moderately high, lending a prickly, refreshing quality. There is a very faint, well-integrated alcohol warmth on the finish, with no harshness or astringency.
