Deer Bear Kompot is a vibrant Wild Specialty Beer that evokes the nostalgic essence of traditional fruit compote through a modern, acidic lens. The sensory profile is defined by a lush layering of stone fruits, specifically sun-ripened apricot and succulent peach, which provide a fleshy aromatic depth. This is sharpened by the bright, zesty character of fresh raspberry, cutting through the wild fermentation character. At 6% ABV, the beer presents a complex interplay between lactic tartness and fruit esters, finishing bone-dry and refreshing. It is an expressive, fruit-forward experience that balances rustic fermentation notes with an intense, multi-dimensional harvest-fruit bouquet.
Appearance. Hazy, deep golden-orange with distinct pinkish-red highlights from the raspberry additions. A moderate, frothy, light-pink head shows fair retention and leaves fine lacing on the glass.
Aroma. High intensity fruit aromatics featuring fuzzy peach and jammy apricot. Secondary notes of tart raspberry and a clean, yogurt-like lactic acidity are prominent. Very subtle earthy funk and floral esters complement the fruit without overpowering the primary fruit-forward bouquet.
Taste. A sharp, refreshing lactic tartness immediately hits the palate, followed by a wave of succulent apricot and peach flesh. The mid-palate reveals seedy raspberry flavors and a hint of citric zing. Bitterness is negligible, allowing the fruit acidity to drive the balance. The finish is very dry and crisp, with a lingering raspberry skin character.
Mouthfeel. Medium-light body with high carbonation that creates a spritzy, effervescent texture. Alcohol warmth is very well-integrated and low. A very slight tannin-driven astringency from the fruit skins adds structure and enhances the dry finish.
