This Wild Specialty Beer presents a vibrant sensory interplay between forest fruits and botanical refreshment. The primary profile is driven by a sharp, lactic acidity that carries intense notes of ripe raspberry and earthy blueberry. These berry characters are seamlessly integrated with a distinctive cooling sensation from the mint, which provides a lifted, herbal counterpoint to the tart fruit. The wild fermentation character adds a layer of rustic complexity, though the focus remains on the bright, jammy fruit expression. It is a refreshing, dry, and highly aromatic ale where the acidity enhances the fruit's natural zest while the mint ensures a crisp, clean finish.

Appearance. SRM 15–20; deep ruby to reddish-purple with a hazy, opaque clarity. Features a pink-tinted, fine-beaded head with moderate to low retention and light lacing.

Aroma. High intensity aromatics of fresh raspberry jam and crushed blueberries. A noticeable cooling herbal note from the mint is present, layered over a clean lactic tartness and a faint, earthy funk characteristic of wild fermentation.

Taste. Initial impression is sharply tart and refreshing. Dominant flavors of tangy raspberry and dark blueberry skins lead into a mid-palate defined by a clean, peppery mint character. Minimal hop bitterness (approx. 5-10 IBU context) allows the fruit acidity to lead. The finish is bone dry and crisp with a lingering berry-tartness and a cooling herbal aftertaste.
