This Specialty IPA delivers a complex sensory experience, merging the resinous, piney character of Simcoe hops with vibrant orange zest and the distinct, floral aromatics of bergamot. The profile is anchored by a subtle foundation of debittered roast malts, offering whispers of chocolate that complement the citrus brightness rather than overwhelming it. High hop intensity drives the experience, with the bergamot providing an elegant, tea-like finish. It strikes a sophisticated balance between the hop-forward dryness of a traditional IPA and the smooth, dark-malt elegance of a darker ale, resulting in a clean, refreshing, and deeply aromatic beer.
Appearance. Dark brown to opaque black in color with a moderate-sized, persistent light tan head and good clarity; some light haze is acceptable.
Aroma. High intensity hop aroma of pine, resin, and passion fruit from Simcoe, intertwined with sharp orange peel and floral bergamot; low notes of chocolate and toast provide a subtle malt background with a clean fermentation profile.
