Citra and Sabro INCOGNITO deliver intense layers of lime zest and creamy coconut, while a heavy whirlpool addition of El Dorado introduces distinctive notes of ripe pineapple, pear, and subtle watermelon. The palate is a refreshing collision of tropical sweetness and citrus tartness, supported by a soft malt backbone. It exemplifies a modern Wild Specialty Beer where fruit-forward hops and controlled souring create a high-impact, refreshing finish.
Appearance. Deep yellow to pale gold (5–7 SRM) with a significant, persistent haze. Pours with a thick, frothy white head that leaves moderate lacing as it recedes.
Aroma. High intensity aromatics featuring dominant notes of pineapple, coconut, and lime. Secondary scents of watermelon and pear emerge from the El Dorado hops. A clean, lemony lactic tartness is present, with very low bready malt in the background.
Taste. Initial tartness of lemon and green apple gives way to a tropical medley of mango and coconut. The hop flavor is punchy, showcasing Citra citrus and Sabro creaminess. Bitterness is mild, as the acidity provides the primary balance. The finish is dry and crisp with a lingering pineapple and rind-like aftertaste.
Mouthfeel. Medium body with a smooth, almost creamy texture. Carbonation is moderate-high, providing a lively prickle on the tongue that enhances the perceived acidity. Very low alcohol warmth.
